Ingredients

  • 2 racks of pork baby back ribs (about 4 pounds total)
  • 1 cup barbecue sauce
  • 1 cup apple juice
  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper (optional, for extra heat)
  • 2 tablespoons olive oil

Instructions

  1. Prepare the Ribs:
    • Remove the membrane from the back of the ribs for better flavor penetration. To do this, slide a knife under the membrane on one end of the ribs and pull it off with a paper towel for a good grip.
    • In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, chili powder, salt, black pepper, and cayenne pepper.
    • Rub the spice mixture evenly over both sides of the ribs.
  2. Sear the Ribs:
    • Set the pressure cooker to the sauté mode and add olive oil.
    • Once the oil is hot, add the ribs in batches and sear them on each side until browned, about 3-4 minutes per side. Remove the ribs and set them aside.
  3. Pressure Cook:
    • Pour the apple juice into the pressure cooker to deglaze the bottom, scraping up any browned bits.
    • Place the ribs upright in the pressure cooker, curving them around the inside.
    • Secure the lid and set the pressure cooker to high pressure for 25 minutes.
  4. Release Pressure:
    • After cooking, allow the pressure to release naturally for 10 minutes, then perform a quick release to vent any remaining pressure.
  5. Glaze and Finish:
    • Preheat your oven broiler or outdoor grill.
    • Carefully remove the ribs from the pressure cooker and place them on a baking sheet.
    • Brush generously with barbecue sauce.
    • Broil or grill the ribs for 5-7 minutes until the sauce caramelizes and becomes sticky, keeping a close eye to prevent burning.
  6. Serve:
    • Let the ribs rest for a few minutes, then slice them into individual portions.
    • Serve with additional barbecue sauce on the side.

Enjoy your delicious, tender, and flavorful Pressure-Cooker Pork Ribs with your favorite sides!
