Pressure-Cooker Indian-Style Chicken And Vegetables

This vibrant and flavorful dish brings together the aromatic spices of Indian cuisine with the convenience of a pressure cooker. Tender chicken and a variety of vegetables are cooked in a fragrant blend of curry powder, garam masala, ginger, and garlic, creating a rich and savory sauce. Ingredients:

  • 1 lb chicken thighs, boneless and skinless, cut into chunks
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 medium tomatoes, diced
  • 1 cup cauliflower florets
  • 1 cup carrots, sliced
  • 1 cup green beans, trimmed
  • 1/2 cup peas (fresh or frozen)
  • 2 tbsp vegetable oil
  • 1 tbsp curry powder
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp chili powder (optional for heat)
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped for garnish

Instructions:

  1. Set your pressure cooker to the sauté function and heat the vegetable oil. Add the chopped onions and cook until they become soft and translucent, about 3-4 minutes.
  2. Stir in the garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Add the curry powder, garam masala, turmeric, cumin, coriander, and chili powder (if using). Stir well to coat the onions in the spices.
  4. Add the chicken pieces and cook for 5 minutes, stirring occasionally, until lightly browned.
  5. Pour in the chicken broth and diced tomatoes, scraping up any browned bits from the bottom of the pot.
  6. Add the cauliflower, carrots, green beans, and peas to the pressure cooker. Season with salt and pepper.
  7. Lock the lid in place and set the pressure cooker to high pressure for 10 minutes.
  8. Once the cooking time is complete, perform a quick release of the pressure.
