The pressure cooker works its magic, infusing the chicken with aromatic herbs and creating a sauce that’s perfectly balanced with the richness of the wine, garlic, and a touch of butter. This meal is perfect for a weeknight dinner but fancy enough for a special occasion. Serve it with mashed potatoes or crusty bread to soak up the flavorful sauce.

Ingredients:

  • 6 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup dry white wine
  • 1/2 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour (for thickening, optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Season the chicken thighs generously with salt and pepper.
  2. Set the pressure cooker to the sauté setting and add olive oil. Once hot, brown the chicken thighs, skin-side down, until golden, about 5-6 minutes. Flip and brown the other side for 2-3 minutes. Remove the chicken and set aside.
  3. Add the garlic and onions to the pressure cooker and sauté until softened, about 3-4 minutes.
  4. Pour in the white wine, scraping up any browned bits from the bottom of the pot. Allow the wine to simmer for 2 minutes.
  5. Stir in the chicken broth, Dijon mustard, and thyme. Return the chicken thighs to the pot, skin-side up.
  6. Lock the lid in place and set the pressure cooker to high pressure for 10 minutes.
  7. After the cooking time is complete, allow the pressure to release naturally for 10 minutes before doing a quick release.
  8. Remove the chicken thighs and set them aside. Stir in the butter to the sauce. For a thicker sauce, whisk together the flour with a little water and stir it into the pot, simmering on the sauté setting for a few minutes until thickened.
  9. Serve the chicken thighs with the wine sauce, garnished with fresh parsley.
