Pork Tenderloin with Mushrooms

This Pork Tenderloin with Mushrooms is a perfect combination of tender, juicy pork and earthy mushrooms, creating a dish that’s both elegant and comforting. The pork is seared to perfection, locking in the juices, and then baked with a savory mushroom sauce that complements the meat beautifully. The mushrooms add a rich, umami flavor, enhanced by garlic and herbs, making this dish ideal for a special dinner or a cozy meal at home. Serve it with a side of roasted vegetables or mashed potatoes for a complete and satisfying dinner.

Ingredients:

  • 1 pork tenderloin (about 1 to 1.5 pounds)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 2 cups mushrooms, sliced (cremini or button mushrooms work well)
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C).
  2. Season the pork: Pat the pork tenderloin dry with paper towels. Season it evenly with salt, pepper, thyme, and garlic powder.
  3. Sear the pork: In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the pork tenderloin and sear on all sides until browned, about 2-3 minutes per side.
  4. Cook the mushrooms: Remove the pork from the skillet and set aside. In the same skillet, add the sliced mushrooms and cook until they release their moisture and become golden brown, about 5-7 minutes. Add the minced garlic and cook for an additional 1 minute.
  5. Make the sauce: Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in the heavy cream and Dijon mustard, mixing well. Let the sauce simmer for 2-3 minutes until slightly thickened.
  6. Bake the pork: Return the pork tenderloin to the skillet, spooning some of the mushroom sauce over the top. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
  7. Rest and serve: Remove the pork from the oven and let it rest for 5 minutes before slicing. Serve the pork tenderloin slices with the mushroom sauce drizzled over the top. Garnish with fresh parsley if desired.

Enjoy your flavorful Pork Tenderloin with Mushrooms!
