Ingredients:

  • 4 bone-in or boneless pork chops, about 1 inch thick
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1/4 cup dry white wine (optional)
  • 2 tbsp capers, drained
  • 1/4 cup pitted Kalamata olives, halved
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper, to taste
  • Fresh basil or parsley, chopped, for garnish

Instructions:

  1. Sear the Pork Chops:
    • Season the pork chops with salt and pepper on both sides. Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 3-4 minutes on each side until they are golden brown. Remove the pork chops from the skillet and set them aside.
  2. Sauté the Aromatics:
    • In the same skillet, add the chopped onion and sauté for 4-5 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
  3. Make the Sauce:
    • Pour in the white wine (if using) and cook for 2-3 minutes until slightly reduced. Add the diced tomatoes, capers, olives, dried oregano, and red pepper flakes (if using). Stir to combine, and bring the sauce to a simmer.
  4. Simmer the Pork Chops:
    • Return the pork chops to the skillet, nestling them into the sauce. Reduce the heat to medium-low, cover, and simmer for 15-20 minutes, or until the pork chops are cooked through (internal temperature of 145°F/63°C) and the sauce has thickened slightly.
  5. Serve:
    • Garnish the Pork Chops Capri with fresh basil or parsley. Serve hot with your choice of sides.

Pork Chops Capri is a dish that brings together the robust flavors of Mediterranean cooking with the hearty satisfaction of tender pork chops. The bright, tangy sauce makes this dish a delight for the senses, perfect for a dinner that feels both special and comforting.
