Ingredients:

  • For the pizza dough:
    • 2 1/4 teaspoons active dry yeast
    • 1 teaspoon sugar
    • 1 cup warm water (about 110°F/45°C)
    • 2 1/2 cups all-purpose flour
    • 2 tablespoons olive oil
    • 1 teaspoon salt
  • For the topping:
    • 1 cup cherry tomatoes, halved
    • 1 cup fresh mozzarella cheese, sliced or torn into small pieces
    • Fresh basil leaves
    • 2 tablespoons olive oil
    • 2 cloves garlic, minced
    • Salt and pepper to taste
    • Balsamic glaze (optional)

Instructions:

  1. Prepare the pizza dough:
    • In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5-10 minutes, until it becomes frothy.
    • In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
    • Mix until a dough forms, then knead on a floured surface for about 5-7 minutes, until the dough is smooth and elastic.
    • Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
  2. Preheat the oven:
    • Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat up.
  3. Prepare the toppings:
    • In a small bowl, combine the olive oil and minced garlic.
    • Toss the halved cherry tomatoes with a little salt and pepper.
  4. Assemble the pizza:
    • Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion out on a floured surface to your desired thickness.
    • Transfer the rolled-out dough to a piece of parchment paper for easy transfer to the oven.
    • Brush the dough with the garlic olive oil mixture.
    • Arrange the cherry tomatoes and mozzarella evenly over the pizza.
  5. Bake the pizza:
    • Carefully transfer the parchment paper with the pizza onto the preheated pizza stone or baking sheet.
    • Bake for 10-12 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
  6. Finish and serve:
