PIEROGI CHICKEN SUPPER

Ingredients:

Instructions:

  1. Cook the Chicken:
    • Season the chicken breasts with salt and pepper on both sides. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
  2. Sauté the Onion and Garlic:
    • In the same skillet, add the sliced onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

    • Pour in the chicken broth, heavy cream, Dijon mustard, and dried thyme. Stir to combine, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a simmer and let it cook for 2-3 minutes until the sauce thickens slightly.
  4. Add the Pierogi:
    • Return the chicken to the skillet and nestle the frozen pierogi around the chicken breasts. Spoon some of the sauce over the pierogi and chicken to coat them.
  5. Cook Until Heated Through:
    • Cover the skillet with a lid and reduce the heat to medium-low. Cook for 10-12 minutes, or until the pierogi are heated through and the chicken is tender. If using, sprinkle the shredded cheddar cheese over the top during the last 5 minutes of cooking, allowing it to melt.
  6. Serve:
