Patatas Bravas

Patatas Bravas is a classic Spanish tapas dish that consists of crispy, golden potatoes served with a spicy, smoky tomato sauce. Ingredients:

For the Potatoes:

  • 4 large russet potatoes, peeled and cut into 1-inch cubes

For the Bravas Sauce:

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon smoked paprika
  • ½ teaspoon hot paprika or cayenne pepper (adjust to taste)
  • 1 teaspoon sugar
  • 1 tablespoon red wine vinegar
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Potatoes:
    • Preheat your oven to 425°F (220°C). Toss the cubed potatoes with olive oil and a generous pinch of salt.
    • Spread the potatoes in a single layer on a baking sheet and roast for 25-30 minutes, or until they are golden brown and crispy, flipping them halfway through.
  2. Make the Bravas Sauce:
    • While the potatoes are roasting, heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
    • Add the minced garlic and cook for another minute. Stir in the diced tomatoes, smoked paprika, hot paprika or cayenne, sugar, and red wine vinegar. Bring the mixture to a simmer and cook for about 15 minutes, until the sauce has thickened.
    • Use an immersion blender to puree the sauce until smooth, or carefully transfer it to a blender. Season with salt and pepper to taste.
  3. Serve:
    • Arrange the crispy potatoes on a serving plate and spoon the warm bravas sauce over the top. Garnish with chopped fresh parsley.
