Pasta With Smoky Shiitakes And Winter Greens

This hearty and flavorful pasta dish is perfect for cold winter nights when you crave something comforting yet nutritious. The smokiness of the shiitake mushrooms adds a deep, earthy flavor that pairs beautifully with the slightly bitter notes of winter greens like kale or Swiss chard. Tossed with al dente pasta and a hint of garlic, this dish is a delightful balance of textures and flavors, making it a satisfying meal on its own or a great side dish.

Ingredients:

  • 8 oz pasta (penne or rigatoni works well)
  • 8 oz shiitake mushrooms, stemmed and sliced
  • 4 cups winter greens (kale, Swiss chard, or collard greens), chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Juice of half a lemon

Instructions:

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.
  2. Prepare the Shiitakes: While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced shiitake mushrooms and cook for about 5-7 minutes, until they begin to brown and release their juices.
  3. Season the Mushrooms: Add the smoked paprika and red pepper flakes (if using) to the mushrooms. Stir well to coat the mushrooms in the spices, and cook for another 2-3 minutes until the mushrooms have a nice smoky flavor.
  4. Add the Greens: Add the chopped winter greens to the skillet with the mushrooms. Cook for 3-5 minutes, stirring occasionally, until the greens are wilted and tender.
  5. Combine and Serve: Add the cooked pasta to the skillet with the mushrooms and greens. Toss everything together, ensuring the pasta is well coated with the mushroom and greens mixture. Season with salt and pepper to taste. Drizzle with lemon juice and sprinkle with Parmesan cheese if desired.
  6. Serve: Serve hot, garnished with extra Parmesan and a drizzle of olive oil if desired.

Enjoy your comforting and smoky pasta dish!
