The combination of juicy orange segments, crunchy lettuce, and a light citrus dressing makes this salad both delicious and healthy. The addition of nuts and cheese adds texture and richness, making it a well-balanced dish that can be enjoyed on its own or as a side dish.

Ingredients:

  • 1 head of romaine lettuce, chopped
  • 2 large oranges, peeled and segmented
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup toasted almonds or walnuts
  • 1/4 cup crumbled feta or goat cheese
  • 1/4 cup dried cranberries (optional)

For the dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons freshly squeezed orange juice
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions:

  1. Prepare the lettuce: Wash and dry the lettuce, then chop it into bite-sized pieces. Place the lettuce in a large salad bowl.
  2. Add the oranges: Peel the oranges, removing as much of the white pith as possible. Cut between the membranes to release the segments. Add the orange segments to the bowl with the lettuce.
  3. Add other ingredients: Add the sliced red onion, toasted nuts, crumbled cheese, and dried cranberries (if using) to the salad bowl.
  4. Make the dressing: In a small bowl, whisk together the olive oil, orange juice, lemon juice, honey, salt, and pepper until well combined.
  5. Dress the salad: Pour the dressing over the salad and toss gently to combine, ensuring all the ingredients are evenly coated with the dressing.
  6. Serve: Transfer the salad to a serving platter or individual plates and serve immediately.

Enjoy this delightful Orange Lettuce Salad as a refreshing starter or a light main course!
