Okra Patties are a delightful Southern-inspired dish that brings out the best in this often-underappreciated vegetable. These patties are crispy on the outside, tender on the inside, and packed with flavor. The unique texture of okra combined with a blend of spices and a hint of cornmeal makes these patties a perfect side dish or even a main course when served with a fresh salad. They’re an excellent way to enjoy okra if you’re looking for something a little different from the usual fried or stewed preparations.
Ingredients:
- 1 pound fresh okra, finely chopped
- 1 small onion, finely chopped
- 1/2 cup cornmeal
- 1/4 cup all-purpose flour
- 1 egg, lightly beaten
- 1/4 cup milk
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional, for heat)
- Vegetable oil for frying
Instructions:
- Prepare the Okra: Wash and dry the okra thoroughly. Cut off the ends and finely chop the okra. Place the chopped okra in a large mixing bowl.
- Mix the Ingredients: Add the finely chopped onion, cornmeal, flour, beaten egg, and milk to the bowl with the okra. Stir to combine. Sprinkle in the baking powder, salt, pepper, paprika, garlic powder, and cayenne pepper if using. Mix until all the ingredients are well incorporated.
- Heat the Oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium heat until hot but not smoking.
- Form the Patties: Using your hands or a spoon, form small patties from the okra mixture, about 2-3 inches in diameter. Carefully place the patties in the hot oil.
- Fry the Patties: Cook the patties for 3-4 minutes on each side, or until golden brown and crispy. Be sure not to overcrowd the skillet; fry in batches if necessary.
- Drain and Serve: Once the patties are cooked, remove them from the skillet and drain on paper towels. Serve hot as a side dish or with your favorite dipping sauce.
Enjoy your Okra Patties with a squeeze of lemon or a side of spicy remoulade sauce for an extra kick!
