Ingredients:

  • 4 slices of thick-cut bacon, chopped
  • 1 small red onion, finely diced
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey or sugar
  • Salt and pepper, to taste
  • 1 hard-boiled egg, chopped (optional, for garnish)

Instructions:

  1. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the drippings in the skillet.
  2. Add the diced red onion to the skillet with the bacon drippings and sauté for 2-3 minutes until softened.
  3. Stir in the apple cider vinegar, Dijon mustard, and honey or sugar, whisking to combine. Season with salt and pepper to taste, and let the dressing simmer for 1-2 minutes to meld the flavors.
