MOJO PORK BOWLS

Mojo Pork Bowls are a vibrant and flavorful dish inspired by Cuban cuisine, featuring tender, citrus-marinated pork served over a bed of rice with fresh vegetables. Ingredients:

For the mojo pork:

  • 2 lbs pork shoulder or pork loin, cut into chunks

  • 1 tsp dried oregano
  • 1/4 cup olive oil
  • Salt and pepper to taste

  • 2 cups cooked rice (white, brown, or cilantro-lime rice)
  • 1 cup black beans, drained and rinsed
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • Fresh cilantro, chopped
  • Lime wedges for serving

Instructions:

  1. Marinate the pork: In a large bowl, whisk together the orange juice, lime juice, garlic, cumin, oregano, olive oil, salt, and pepper. Add the pork chunks to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or up to overnight for maximum flavor.
  2. Cook the pork: Preheat your oven to 325°F (160°C). Transfer the pork and marinade to a baking dish and cover with foil. Roast for 2-3 hours, or until the pork is tender and easily shreds with a fork. Alternatively, you can cook the pork in a slow cooker on low for 6-8 hours.
