Ingredients:

  • 1 cup dried lentils, rinsed and drained
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 celery stalk, diced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Sauté the Vegetables:
    • In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
  2. Add the Spices:
    • Stir in the ground cumin, ground coriander, and smoked paprika. Cook for 1-2 minutes, allowing the spices to become aromatic.
  3. Add Lentils and Tomatoes:
    • Add the rinsed lentils to the pot, stirring to coat them with the spice mixture. Then, add the diced tomatoes (with their juices) and the bay leaf.
  4. Simmer the Soup:
    • Pour in the vegetable or chicken broth, stirring well to combine. Bring the mixture to a boil, then reduce the heat to low and let the soup simmer for 25-30 minutes, or until the lentils are tender.
    • Remove the bay leaf from the pot.
  5. Finish the Soup:
    • Stir in the lemon juice and season the soup with salt and pepper to taste.
  6. Serve:
    • Ladle the soup into bowls and garnish with freshly chopped parsley. Serve hot with crusty bread on the side.

Enjoy your Lentil-Tomato Soup, a delicious and nourishing meal that’s perfect for any occasion!
