Lentil Tacos

Instructions:

  1. Cook the Lentils: In a medium saucepan, combine the lentils and vegetable broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for about 20-25 minutes, or until the lentils are tender but still hold their shape. Drain any excess liquid if necessary.
  2. Sauté the Aromatics: In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the garlic and cook for another minute until fragrant.
