LEMONY GREEN BEANS

Lemony Green Beans are a bright and refreshing side dish that adds a zesty twist to the classic green bean recipe. Ingredients:

  • 1 lb fresh green beans, trimmed
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Zest and juice of 1 lemon
  • Salt and pepper to taste
  • 1 tbsp fresh parsley, chopped (optional)

Instructions:

  1. Blanch the green beans: Bring a large pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes, until they are bright green and slightly tender. Drain and immediately transfer the beans to an ice bath to stop the cooking. Drain again and set aside.
  2. Sauté the garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  3. Add the green beans: Add the blanched green beans to the skillet and toss to coat them in the garlic and oil. Cook for an additional 2-3 minutes until heated through.
  4. Add lemon and season: Remove the skillet from the heat and add the lemon zest and juice. Season with salt and pepper to taste. Toss to combine.
  5. Serve: Garnish with fresh parsley, if desired, and serve hot.
