Ingredients:
- 4 lbs Jersey Fresh tomatoes, peeled and chopped
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon sugar (optional)
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes (optional)
Instructions:
- Prepare the Tomatoes: Begin by peeling the tomatoes. To do this easily, score an “X” on the bottom of each tomato and blanch them in boiling water for 30 seconds, then transfer them to an ice bath. The skins should peel off easily. Chop the peeled tomatoes and set aside.
- Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, green bell pepper, and red bell pepper. Sauté until the vegetables are softened, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
- Cook the Tomatoes: Add the chopped tomatoes to the pot. Stir in the salt, black pepper, sugar (if using), basil, oregano, and crushed red pepper flakes (if using). Bring the mixture to a simmer.
