HERB ROAST CHICKEN

Ingredients:

  • 1 whole chicken (4-5 lbs)
  • 3 tablespoons olive oil or melted butter
  • 4 garlic cloves, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 lemon, quartered
  • Salt and pepper, to taste
  • 1 onion, quartered
  • 1 cup chicken broth (optional for basting)

Instructions:

  1. Preheat the oven: Preheat your oven to 425°F (220°C).
  2. Prepare the herb mixture: In a small bowl, mix the olive oil or melted butter with the minced garlic, rosemary, thyme, parsley, salt, and pepper.
  3. Season the chicken: Pat the chicken dry with paper towels and place it in a roasting pan. Rub the herb mixture all over the chicken, including under the skin and inside the cavity. Stuff the cavity with lemon quarters and onion pieces.
  4. Roast the chicken: Place the chicken in the oven and roast for about 1 hour 20 minutes, or until the internal temperature reaches 165°F (75°C) when measured in the thickest part of the thigh. Baste the chicken with chicken broth or its own juices halfway through roasting for extra moisture.
  5. Rest and serve: Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
