Hawaiian Ribs

Hawaiian Ribs are a mouthwatering fusion of tender, succulent pork ribs and the tropical flavors of the Hawaiian islands. Ingredients:

  • 2 racks of pork ribs (about 4 pounds)

  • 1 tablespoon ginger, minced
  • 3 cloves garlic, minced

  • 1/4 cup honey
  • 1/4 cup pineapple chunks (optional, for garnish)
  • Sliced green onions and sesame seeds for garnish

Instructions:

  1. Prepare the Marinade:
    • In a medium bowl, whisk together the pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, minced ginger, garlic, sesame oil, and red pepper flakes (if using) until well combined.
  2. Marinate the Ribs:
    • Place the pork ribs in a large resealable plastic bag or a shallow dish.
    • Pour the marinade over the ribs, making sure they are well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to penetrate the meat.
  3. Cook the Ribs:
    • Preheat your oven to 300°F (150°C).
    • Remove the ribs from the marinade and place them on a large baking sheet lined with aluminum foil. Reserve the marinade.
    • Cover the ribs with another piece of foil, sealing the edges to create a packet.
    • Bake in the preheated oven for 2.5 to 3 hours, or until the ribs are tender and the meat is starting to pull away from the bones.
  4. Make the Glaze:
    • While the ribs are cooking, pour the reserved marinade into a saucepan. Bring it to a boil, then reduce the heat and let it simmer for about 10 minutes, or until the sauce has thickened into a glaze. Stir in the honey.
  5. Finish the Ribs:
    • Once the ribs are tender, remove them from the oven and increase the oven temperature to 425°F (220°C).
    • Brush the ribs generously with the pineapple glaze and return them to the oven, uncovered, for an additional 10-15 minutes, or until the glaze is bubbly and caramelized.
  6. Serve:
    • Let the ribs rest for a few minutes before cutting them into individual portions.
    • Garnish with pineapple chunks, sliced green onions, and sesame seeds for a touch of freshness and extra flavor.
