Grilled Pork Chops

Ingredients:

  • 4 bone-in pork chops (1-inch thick)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions:

  1. Preheat the grill: Set your grill to medium-high heat (about 400°F/200°C). Clean the grates thoroughly and lightly oil them to prevent sticking.
  2. Prepare the pork chops: Pat the pork chops dry with paper towels. In a small bowl, combine the olive oil, minced garlic, rosemary, thyme, paprika, salt, and pepper. Rub this mixture evenly over both sides of the pork chops. Squeeze lemon juice over the chops for added flavor.
  3. Grill the pork chops: Place the pork chops on the grill and cook for about 4-5 minutes per side, depending on the thickness. For a medium cook, the internal temperature should reach 145°F (63°C). Use a meat thermometer to check for doneness.
  4. Rest the chops: Remove the pork chops from the grill and let them rest for 5 minutes to allow the juices to redistribute.
