Grilled Chickpea Salad Sandwich

This Grilled Chickpea Salad Sandwich is a delicious and healthy twist on the classic sandwich. Packed with protein-rich chickpeas, this recipe combines the natural nuttiness of chickpeas with tangy flavors, fresh herbs, and a hint of smokiness from the grill. The chickpeas are mashed and mixed with a vibrant blend of spices, lemon juice, and olive oil, creating a creamy yet chunky filling. Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cucumber
  • 1/4 cup chopped fresh parsley
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 4 slices of whole grain bread
  • 1 tbsp butter (for grilling)
  • Optional toppings: spinach leaves, tomato slices, or avocado

Instructions:

  1. In a large bowl, mash the chickpeas with a fork or potato masher, leaving some chunks for texture.
  2. Add olive oil, lemon juice, Dijon mustard, red onion, cucumber, parsley, garlic powder, smoked paprika, salt, and pepper. Mix until well combined.
  3. Taste and adjust seasonings if needed. Set aside.
  4. Heat a skillet or grill pan over medium heat.
  5. Butter one side of each bread slice.
  6. Spread the chickpea mixture evenly on two slices of bread (on the non-buttered side), then add any optional toppings like spinach, tomatoes, or avocado.
  7. Top with the remaining slices of bread, buttered side out.
  8. Place the sandwiches in the skillet and grill for about 3-4 minutes per side, or until the bread is golden and crispy.
  9. Serve warm and enjoy!
