Mango Quesadillas

Mango quesadillas are a delightful fusion of sweet and savory flavors that make for a perfect light meal or snack. The juicy, ripe mango pairs beautifully with the melted cheese, creating a creamy, tropical filling. Add in a bit of heat with some jalapeños and a squeeze of lime for a balanced, flavorful experience. Whether you’re making these for a quick lunch, a party appetizer, or just a treat to enjoy, these quesadillas are sure to impress with their unique and refreshing taste.

Ingredients:

  • 2 large flour tortillas
  • 1 ripe mango, peeled, pitted, and thinly sliced
  • 1 cup shredded Monterey Jack or cheddar cheese
  • 1 small red onion, thinly sliced
  • 1 jalapeño, thinly sliced (optional)
  • Fresh cilantro leaves
  • 1 tablespoon butter or olive oil
  • Lime wedges, for serving

Instructions:

  1. Prepare the ingredients: Start by slicing the mango into thin strips. If you want a bit of heat, thinly slice the jalapeño as well.
  2. Assemble the quesadillas: Lay one tortilla flat on a clean surface. Evenly distribute half of the shredded cheese over the tortilla. Layer the mango slices on top of the cheese, followed by the red onion slices, jalapeño (if using), and fresh cilantro leaves. Sprinkle the remaining cheese over the top, and then place the second tortilla over the filling.
  3. Cook the quesadillas: Heat a large skillet over medium heat and add the butter or olive oil. Once melted, carefully place the assembled quesadilla into the skillet. Cook for 3-4 minutes on one side, or until the tortilla is golden brown and crispy. Carefully flip the quesadilla and cook the other side for an additional 3-4 minutes, until the cheese is fully melted and the tortilla is golden and crisp.
  4. Serve: Remove the quesadilla from the skillet and let it cool slightly before cutting it into wedges. Serve with lime wedges on the side for a zesty finish.

Enjoy your sweet and savory Mango Quesadillas!
