Ideal for breakfast or as a side for soups and stews, Soft Oatmeal Bread is easy to make and fills your kitchen with the warm, inviting aroma of freshly baked bread. Whether you’re an experienced baker or new to bread-making, this recipe is sure to become a favorite in your household.

Ingredients:

  • 1 cup old-fashioned rolled oats
  • 1 1/2 cups boiling water
  • 2 tablespoons unsalted butter, softened
  • 1/4 cup honey or brown sugar
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 1/2 cup warm water (110°F/45°C)
  • 1 teaspoon salt
  • 3 1/2 to 4 cups all-purpose flour
  • Additional rolled oats, for topping

Instructions:

  1. Prepare the Oat Mixture:
    • In a large mixing bowl, combine the rolled oats, boiling water, butter, and honey or brown sugar. Stir to combine and let it sit for about 10 minutes, allowing the oats to soften and the mixture to cool slightly.
  2. Activate the Yeast:
    • In a small bowl, dissolve the yeast in the warm water. Let it stand for about 5 minutes until it becomes frothy, indicating that the yeast is active.
  3. Combine Ingredients:
    • Add the yeast mixture and salt to the oat mixture. Stir to combine. Gradually add the flour, one cup at a time, mixing until a soft dough forms. The dough should be slightly sticky but manageable.
  4. Knead the Dough:
    • Turn the dough out onto a floured surface and knead for about 8-10 minutes, or until the dough is smooth and elastic. If the dough is too sticky, add a little more flour as needed.
  5. First Rise:
    • Place the kneaded dough in a lightly greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm, draft-free place for about 1 to 1 1/2 hours, or until it has doubled in size.
  6. Shape the Loaf:
    • Punch down the risen dough to release the air. Turn it out onto a lightly floured surface and shape it into a loaf. Place the loaf in a greased 9×5-inch loaf pan.
  7. Second Rise:
    • Cover the loaf with a kitchen towel and let it rise again for about 30-45 minutes, or until it has risen just above the top of the pan.
  8. Preheat the Oven and Bake:
    • Preheat your oven to 350°F (175°C). Brush the top of the loaf with a little water and sprinkle with additional rolled oats for decoration. Bake for 35-40 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom. If the top browns too quickly, cover it loosely with aluminum foil.
  9. Cool the Bread:
    • Remove the loaf from the oven and let it cool in the pan for 10 minutes. Then, transfer the bread to a wire rack to cool completely before slicing.

Soft Oatmeal Bread is a delightful, everyday bread that combines the wholesome goodness of oats with the softness of homemade bread. Its mild flavor and fluffy texture make it a versatile addition to any meal, perfect for toasting, sandwiches, or simply enjoying on its own.
