Fruit and Nut Muffins

  • 1 ½ cups all-purpose flour
  • ½ cup whole wheat flour
  • 1 tablespoon baking powder

  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup buttermilk
  • 1 cup mixed dried fruits (e.g., raisins, cranberries, chopped apricots)
  • 1 cup mixed nuts (e.g., walnuts, almonds, pecans), chopped

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.
  2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, mix the melted butter and sugar until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.
  5. Fold in the dried fruits and nuts until evenly distributed throughout the batter.
  6. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
