Instructions

  1. Prepare the Pan: Line an 8×8-inch baking dish with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the parchment with butter or non-stick spray.
  2. Cook the Caramel: In a large saucepan over medium heat, melt the butter. Add the granulated sugar, brown sugar, corn syrup, and heavy cream. Stir the mixture until the sugar is fully dissolved and the ingredients are well combined.
  3. Bring to a Boil: Attach a candy thermometer to the saucepan. Bring the mixture to a boil, stirring occasionally, and cook until the caramel reaches 245°F (118°C), known as the firm ball stage. This should take about 10-15 minutes.
  4. Add Vanilla: Once the caramel reaches the desired temperature, remove the saucepan from the heat. Stir in the vanilla extract and 1 teaspoon of fleur de sel.
  5. Pour and Sprinkle: Pour the caramel into the prepared baking dish. Let it cool for about 2-3 minutes, then sprinkle the top lightly with additional fleur de sel.
  6. Cool Completely: Allow the caramel to cool completely at room temperature, or place it in the refrigerator to speed up the process.
  7. Cut and Wrap: Once the caramel has fully set, use the parchment overhang to lift it out of the pan. Cut the caramel into small squares or rectangles, and wrap each piece in wax paper or parchment paper.
