Egg White Bites are a light, protein-packed snack or breakfast option that’s perfect for those looking to enjoy a nutritious and low-calorie meal on the go. Made with fluffy egg whites and filled with vegetables, cheese, or even lean meats, these bites are versatile and easy to customize. Whether you’re meal prepping for the week or looking for a healthy, grab-and-go option, egg white bites are a satisfying choice. Baked to perfection in muffin tins, they’re simple to make and ideal for storing in the fridge or freezer.

Ingredients:

  • 8 large egg whites
  • 1/4 cup spinach, chopped
  • 1/4 cup bell peppers, diced
  • 1/4 cup mushrooms, diced
  • 1/4 cup shredded cheese (optional)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste
  • Cooking spray or oil for greasing the muffin tin

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with cooking spray or oil.
  2. Prepare the vegetables: In a skillet, sauté the spinach, bell peppers, and mushrooms over medium heat for 3-4 minutes until softened. Set aside to cool slightly.
  3. Whisk the egg whites: In a large bowl, whisk the egg whites with garlic powder, onion powder, salt, and pepper until combined.
  4. Assemble the bites: Evenly divide the sautéed vegetables among the muffin tin cups. If you’re using cheese, sprinkle a little on top of the vegetables in each cup. Pour the egg whites over the vegetables, filling each muffin cup about 3/4 full.
  5. Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the egg whites are set and slightly golden on top.
  6. Cool and serve: Allow the egg white bites to cool for a few minutes before removing them from the tin. Serve immediately or store in the fridge for up to 4 days for an easy, quick breakfast.

Enjoy your Egg White Bites warm or cold for a healthy, protein-rich snack or breakfast that you can enjoy any time of day!
