Ingredients:

  • 12 oz (340g) rotini pasta
  • 1 cup cherry tomatoes, halved

  • 1/2 cup green bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1 cup cubed salami or pepperoni
  • 1/2 cup cubed mozzarella or cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
For the Dressing:
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions:

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to cool. Set aside.
  2. Prepare the Vegetables and Add-ins: In a large bowl, combine the cherry tomatoes, cucumber, red and green bell peppers, red onion, black olives, cubed salami or pepperoni, cubed cheese, and parsley.
