Pumpkin Apple Muffins are a moist, flavorful treat that combines the best of fall flavors—sweet pumpkin and tart apples. With a blend of warm spices like cinnamon and nutmeg, these muffins are perfect for breakfast, snacks, or even dessert. The diced apples add a juicy bite, while the pumpkin keeps the muffins tender and delicious. Enjoy these as a wholesome treat with your morning coffee or packed in a lunchbox!

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon ground allspice (optional)
  • 1/2 cup canned pumpkin purée
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/3 cup vegetable oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup peeled and diced apple (Granny Smith or Honeycrisp work well)
  • 1/4 cup milk (or dairy-free alternative)
  • Optional topping: 2 tablespoons rolled oats, chopped nuts, or streusel

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease the cups lightly.
  2. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and allspice (if using). Set aside.
  3. Prepare the wet ingredients: In a large bowl, whisk together the pumpkin purée, granulated sugar, brown sugar, vegetable oil (or melted butter), eggs, and vanilla extract until smooth.
  4. Combine wet and dry ingredients: Gradually stir the dry ingredients into the wet ingredients, mixing until just combined. Be careful not to overmix. Stir in the diced apples and milk to evenly distribute the apples throughout the batter.
  5. Scoop the batter: Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full. If desired, sprinkle the tops with oats, nuts, or streusel for added texture.
  6. Bake the muffins: Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. The muffins should be golden and firm to the touch.
  7. Cool and serve: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature.

These Pumpkin Apple Muffins are a delicious blend of fall flavors, perfect for any time of day. They stay moist for several days and make a great addition to breakfast, snacks, or desserts!
