Crockpot Beef Tenderloin

This Crockpot Beef Tenderloin is a simple yet elegant dish perfect for special occasions or a comforting family dinner. Slow-cooking the tenderloin ensures that it becomes incredibly juicy, flavorful, and tender with minimal effort. The beef is seasoned with herbs and spices, complemented by a rich garlic and butter sauce that infuses deep flavor throughout the cooking process. Pair it with mashed potatoes or roasted vegetables for a complete meal that feels gourmet but is easily prepared in the slow cooker.

Ingredients:

  • 2-3 lb beef tenderloin
  • 4 cloves garlic, minced
  • 4 tbsp butter, melted
  • 1 tbsp olive oil
  • 1 tsp fresh rosemary, chopped
  • 1 tsp fresh thyme, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup beef broth
  • 2 tbsp Worcestershire sauce

Instructions:

  1. Prep the tenderloin: Pat the beef tenderloin dry with paper towels. Rub the olive oil over the tenderloin and season it with salt, pepper, rosemary, and thyme.
  2. Sear the tenderloin (optional): Heat a skillet over medium-high heat and sear the tenderloin on all sides until browned, about 2 minutes per side. This step helps develop a flavorful crust.
  3. Prepare the crockpot: In a small bowl, mix the minced garlic, melted butter, Worcestershire sauce, and beef broth. Pour half of the mixture into the bottom of the crockpot.
  4. Add the tenderloin: Place the seared tenderloin in the crockpot and pour the remaining garlic-butter mixture over the beef.
  5. Cook: Cover and cook on low for 3-4 hours, or until the internal temperature reaches 135°F (for medium-rare) or your preferred doneness.
  6. Rest and serve: Once cooked, remove the beef tenderloin and let it rest for 10 minutes before slicing. Serve with the cooking juices drizzled over the top.

Enjoy this succulent and flavorful beef tenderloin!
