Ingredients:

For the Boxty:

  • 1 cup grated raw potatoes
  • 1 cup mashed potatoes
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup milk
  • 1 egg, beaten
  • Butter or oil for frying

For the Creamy Chicken Filling:

  • 2 chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 cup white wine (optional)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Prepare the Boxty:
    • In a large bowl, mix together the grated potatoes, mashed potatoes, flour, baking powder, salt, and pepper.
    • Stir in the milk and beaten egg until you have a smooth batter.
    • Heat a non-stick skillet over medium heat and add a little butter or oil.
    • Drop a spoonful of the batter into the skillet, spreading it out into a pancake shape.
    • Cook for 3-4 minutes on each side, or until golden brown and crispy. Repeat with the remaining batter and set the boxty aside.
  2. Cook the Chicken:
    • In a large pan, heat the olive oil and butter over medium heat.
    • Add the diced chicken and cook until browned on all sides, about 5-7 minutes.
    • Add the garlic and onion, cooking until softened and fragrant, about 2-3 minutes.
    • If using, pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom. Let the wine reduce by half.
    • Stir in the heavy cream, chicken broth, thyme, and rosemary. Bring to a simmer and cook until the sauce has thickened slightly, about 5 minutes.
    • Season with salt and pepper to taste.
  3. Assemble the Dish:
    • Place a boxty on a serving plate and spoon the creamy chicken mixture over the top.
    • Garnish with fresh parsley if desired.

Serve your Creamy Chicken Boxty immediately while hot, enjoying the delightful contrast between the crispy potato pancake and the rich, creamy chicken filling. This dish is sure to become a favorite comfort food in your home!
