The combination of tender fish and creamy potatoes, paired with the fresh flavors of parsley and lemon, creates a well-balanced dish that’s both comforting and delicious. Serve them with a side of tartar sauce or a simple green salad for a wholesome, tasty meal.

Ingredients:

  • 1 lb cod fillets, fresh or thawed
  • 2 large potatoes, peeled and diced
  • 1 egg, lightly beaten
  • 1/4 cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour (for coating)
  • 2-3 tablespoons vegetable oil (for frying)
  • Lemon wedges, for serving

Instructions:

  1. Cook the cod: In a large saucepan, bring water to a boil and gently poach the cod fillets for 5-7 minutes until cooked through and flaky. Remove from the water, drain, and let cool. Use a fork to flake the fish into small pieces.
  2. Boil the potatoes: In a separate pot, cook the diced potatoes in salted boiling water for about 10-12 minutes, or until tender. Drain and mash the potatoes until smooth. Let cool slightly.
  3. Mix the ingredients: In a large bowl, combine the flaked cod, mashed potatoes, beaten egg, breadcrumbs, parsley, lemon juice, Dijon mustard, garlic powder, salt, and pepper. Mix well until everything is evenly incorporated.
  4. Shape the cakes: Form the mixture into small patties, about 2-3 inches in diameter. Lightly coat each patty in flour, shaking off any excess.
  5. Fry the fish cakes: Heat the vegetable oil in a large skillet over medium heat. Fry the fish cakes in batches, cooking for about 3-4 minutes on each side, or until golden brown and crispy.
  6. Serve: Serve the cod fish cakes hot with lemon wedges on the side. Pair with tartar sauce or a simple green salad for a complete meal.

These Cod Fish Cakes are crispy on the outside and tender on the inside, offering a delicious blend of flavors and textures that are sure to satisfy!
