Ingredients:

For the Cake:

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt

For the Cinnamon Swirl:

  • 1/3 cup light brown sugar, packed
  • 2 tsp ground cinnamon
  • 1/4 cup unsalted butter, melted

For the Glaze:

  • 1 cup powdered sugar
  • 1-2 tbsp milk
  • 1/2 tsp vanilla extract

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Make the Batter: In a large bowl, cream the softened butter and granulated sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the sour cream and vanilla extract until smooth.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  4. Prepare Cinnamon Swirl: In a small bowl, mix together the brown sugar, cinnamon, and melted butter until combined.
  5. Layer the Cake: Pour half of the batter into the prepared loaf pan. Spoon half of the cinnamon swirl mixture over the batter and use a knife to gently swirl it into the cake. Repeat with the remaining batter and swirl mixture, creating a layered effect.
  6. Bake: Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  7. Make the Glaze: While the cake is cooling, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Drizzle the glaze over the cooled cake.
  8. Serve: Slice and enjoy your Cinnamon Roll Pound Cake with a cup of coffee or tea!
