CHOCOLATE PANFORTE

Ingredients

  • 1 cup almonds, toasted
  • 1/2 cup hazelnuts, toasted
  • 1/2 cup dried figs, chopped
  • 1/2 cup dried cherries or cranberries
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1/2 cup honey
  • 1/2 cup granulated sugar
  • 4 oz dark chocolate, chopped
  • Powdered sugar for dusting

Instructions

  1. Preheat the Oven: Preheat your oven to 325°F (160°C). Line an 8-inch round cake pan with parchment paper and lightly grease it.
  2. Mix the Dry Ingredients: In a large bowl, combine the toasted almonds, hazelnuts, chopped figs, dried cherries, flour, cocoa powder, cinnamon, cloves, and nutmeg. Stir to coat the nuts and fruits with the dry mixture.
  3. Melt the Honey, Sugar, and Chocolate: In a small saucepan, heat the honey and sugar over medium heat, stirring until the sugar dissolves. Let the mixture come to a boil and cook for about 2-3 minutes. Remove from heat and stir in the chopped dark chocolate until melted and smooth.
  4. Combine and Mix: Pour the honey and chocolate mixture over the dry ingredients. Stir quickly to ensure everything is evenly coated and combined.
  5. Bake: Transfer the mixture into the prepared pan, pressing it down evenly. Bake for 30-35 minutes, or until the edges are firm. The center will still be slightly soft, but it will firm up as it cools.
  6. Cool and Dust: Allow the panforte to cool completely in the pan. Once cooled, remove it from the pan and dust with powdered sugar.
