Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted and cooled
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk, room temperature
  • 1 cup semi-sweet chocolate chips (plus extra for topping)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with non-stick spray.
  2. Mix Dry Ingredients: In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. Prepare the Wet Ingredients: In a separate bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined—do not overmix. Fold in the chocolate chips.
  5. Fill the Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle a few extra chocolate chips on top of each muffin for added decadence.
  6. Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs attached.
  7. Cool and Serve: Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Enjoy these delicious chocolate muffins warm or at room temperature, and pair them with a glass of milk or a cup of coffee for the ultimate chocolate treat!
