Chocolate Cheesecake Bars

Chocolate Cheesecake Bars are the perfect treat for chocolate lovers who also crave the creamy richness of cheesecake. These bars feature a decadent chocolate cookie crust, topped with a luscious layer of chocolate cheesecake filling, and finished with a smooth, velvety chocolate ganache. Ideal for parties, holidays, or just a special dessert at home, these bars combine the best of both worlds in every bite—rich, chocolatey goodness and the tangy sweetness of classic cheesecake.

Ingredients:

For the Crust:

  • 1 1/2 cups chocolate graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 16 ounces cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

For the Chocolate Ganache:

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper or foil, leaving some overhang on the sides for easy removal.
  2. Make the Crust: In a medium bowl, mix together the chocolate graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture evenly into the bottom of the prepared pan. Bake for 8-10 minutes, then set aside to cool slightly.
  3. Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add the eggs one at a time, beating well after each addition. Mix in the cocoa powder, vanilla extract, and sour cream until fully combined and smooth.
  4. Bake the Cheesecake Bars: Pour the cheesecake filling over the pre-baked crust and spread it evenly. Bake for 25-30 minutes, or until the center is set but still slightly jiggly. Remove from the oven and let the bars cool completely at room temperature, then refrigerate for at least 2 hours.
  5. Make the Chocolate Ganache: In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and the mixture is smooth.
  6. Top the Bars: Pour the ganache over the chilled cheesecake layer, spreading it out evenly. Refrigerate for another 30 minutes to allow the ganache to set.
  7. Slice and Serve: Use the parchment paper overhang to lift the bars out of the pan. Cut into squares and serve chilled.

These Chocolate Cheesecake Bars are rich, indulgent, and sure to satisfy any sweet tooth with their layers of chocolatey goodness!
