CHOCOLATE BAVARIAN TORTE

Ingredients:

For the Chocolate Cake:

  • 1/4 cup cold water
  • 1/2 cup sugar
  • 1/3 cup unsweetened cocoa powder
  • 2 large egg yolks
  • 1 1/2 cups milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy whipping cream

For the Chocolate Ganache:

  • 1/2 cup heavy cream
  • 4 ounces semisweet chocolate, chopped
  • 1 tablespoon unsalted butter

Instructions:

  1. Make the Chocolate Cake:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
    • In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
    • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
    • Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix just until combined.
    • Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  2. Prepare the Chocolate Bavarian Filling:
    • In a small bowl, sprinkle the gelatin over the cold water and let it bloom for about 5 minutes.
    • In a medium saucepan, whisk together the sugar, cocoa powder, egg yolks, and milk. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon (do not boil). Remove from heat and stir in the bloomed gelatin and vanilla extract.     • Let the mixture cool to room temperature, stirring occasionally to prevent a skin from forming.
    • In a large mixing bowl, whip the heavy cream to soft peaks. Gently fold the cooled chocolate mixture into the whipped cream until fully combined. Refrigerate the filling for about 30 minutes to firm up slightly.
  3. Assemble the Torte:
    • Once the cake is completely cool, slice it horizontally into two or three even layers, depending on your preference.
    • Place the bottom layer of the cake on a serving plate or cake stand. Spread a layer of the chocolate Bavarian filling over the cake. Repeat with the remaining layers of cake and filling, ending with a cake layer on top.
    • Refrigerate the assembled torte for at least 1 hour to allow the filling to set.
  4. Make the Chocolate Ganache:
    • In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and add the chopped chocolate and butter. Let it sit for a minute, then stir until smooth and glossy.
    • Allow the ganache to cool slightly before pouring it over the top of the chilled torte, letting it drip down the sides. Smooth the top with a spatula if needed.
  5. Decorate and Serve:
