Ingredients:

  • 4 bone-in chicken thighs
  • 2 tangerines, peeled and segmented (reserve the zest and juice of 1 tangerine)

  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground turmeric
  • 1/2 tsp paprika
  • 1/2 cup chicken broth
  • 1 tbsp honey
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions:

  1. Prepare the Chicken: Season the chicken thighs with salt, pepper, and paprika. In a tagine or Dutch oven, heat the olive oil over medium heat. Add the chicken thighs, skin side down, and brown for 3-4 minutes per side. Remove and set aside.
  2. Cook the Aromatics: In the same pot, add the sliced onion, minced garlic, and ginger. Sauté until softened, about 5 minutes.
  3. Add Spices: Stir in the cumin, cinnamon, and turmeric, cooking for another minute to release the flavors.
  4. Add Tangerine and Liquids: Add the tangerine segments, zest, juice, honey, and chicken broth to the pot, stirring to combine. Nestle the browned chicken thighs back into the pot, making sure they are partially submerged in the sauce.
  5. Simmer: Cover the tagine or Dutch oven with a lid, reduce the heat to low, and let the chicken simmer for 35-40 minutes, or until the chicken is tender and fully cooked.
  6. Finish and Serve: Once the chicken is cooked, taste the sauce and adjust the seasoning with salt, pepper, or more honey if desired. Garnish with fresh cilantro or parsley before serving.
