Chili Cheese Fries

Ingredients:

  • 1 bag frozen French fries (or homemade fries)
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can kidney beans, drained
  • 1 (15 oz) can diced tomatoes
  • 1 (6 oz) can tomato paste
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • Optional toppings: sour cream, jalapeños, green onions, hot sauce

Instructions:

  1. Prepare the fries: Cook the French fries according to the package directions, or fry your homemade fries until crispy. Set aside.
  2. Make the chili: In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
  3. Add the diced onions and garlic to the skillet and sauté until softened, about 3-4 minutes.
  4. Stir in the chili powder, cumin, paprika, salt, and pepper, cooking for another minute to release the spices’ flavors.
  5. Add the kidney beans, diced tomatoes, tomato paste, and beef broth to the skillet. Stir everything together and bring the mixture to a simmer. Reduce the heat and let the chili cook for about 20-25 minutes, stirring occasionally, until thickened.
  6. Assemble the fries: Spread the cooked fries on a large baking sheet or platter. Spoon the chili over the fries, covering them evenly.
  7. Sprinkle the shredded cheddar cheese generously over the top of the chili-covered fries.
  8. Place the fries under the broiler for 1-2 minutes, just until the cheese is melted and bubbly.
