Ingredients

  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1/4 cup tomato paste
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C). Toss the diced eggplant, zucchini, and bell peppers with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 20-25 minutes, until the vegetables are tender and lightly browned.
  2. Sauté the onion and garlic: In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the garlic and cook for another minute.
  3. Add the tomatoes and chickpeas: Stir in the diced tomatoes, tomato paste, chickpeas, thyme, basil, oregano, salt, and pepper. Bring to a simmer and let cook for 10 minutes to allow the flavors to meld.
  4. Combine and serve: Once the vegetables are roasted, add them to the skillet with the tomato sauce and chickpeas. Stir to combine and cook for another 5 minutes. Adjust seasoning to taste.
  5. Garnish and serve: Serve warm, garnished with fresh basil if desired, and enjoy on its own, over rice, or with crusty bread.
