CHICKEN MASSAMAN CURRY

Ingredients

  • 1/2 cup chicken broth
  • 1 tablespoon fish sauce
  • 1 tablespoon tamarind paste (or juice of 1 lime)
  • 1 tablespoon brown sugar
  • 1 cinnamon stick
  • 3-4 cardamom pods
  • 1/2 cup roasted peanuts
  • 2 medium potatoes, peeled and cubed
  • 1 onion, sliced
  • Salt and pepper to taste
  • Fresh cilantro or Thai basil for garnish
  • Cooked jasmine rice for serving

Instructions

  1. Sear the Chicken: Heat the vegetable oil in a large pot or skillet over medium heat. Add the chicken pieces and cook until lightly browned on all sides, about 5-6 minutes. Remove the chicken and set aside.
