CHEESY CAULIFLOWER BREADSTICK

Cheesy Cauliflower Breadsticks are a low-carb, gluten-free alternative to traditional breadsticks that are packed with flavor. These breadsticks are made with a cauliflower base, mixed with cheese and herbs, and baked until golden and crispy. Perfect as an appetizer, snack, or side dish, they’re a delicious way to enjoy the flavors of garlic bread without the carbs.

Ingredients:

  • 1 medium head of cauliflower, cut into florets
  • 1 large egg
  • 1 1/2 cups shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)
  • Optional: Marinara sauce or garlic butter for dipping

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Cauliflower:
    • In a food processor, pulse the cauliflower florets until they are finely ground, resembling rice. You should have about 3 cups of cauliflower “rice.”
    • Place the cauliflower in a microwave-safe bowl and microwave on high for 5-8 minutes until softened. Let it cool slightly.
  3. Remove Excess Moisture:
    • Once the cauliflower has cooled enough to handle, place it in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is crucial to achieving a firm and crispy breadstick base.
  4. Mix the Dough:
    • In a large mixing bowl, combine the cauliflower, egg, 1 cup of the shredded mozzarella, Parmesan cheese, minced garlic, oregano, basil, salt, and pepper. Mix until well combined and forms a dough-like consistency.
  5. Form the Breadsticks:
    • Transfer the cauliflower mixture to the prepared baking sheet. Use your hands or a spatula to shape the mixture into a rectangular shape, about 1/4-inch thick.
  6. Bake the Base:
    • Bake in the preheated oven for 20-25 minutes, or until the cauliflower crust is golden brown and firm to the touch.
  7. Add the Cheese Topping:
    • Remove the cauliflower crust from the oven and sprinkle the remaining 1/2 cup of mozzarella cheese over the top. Return to the oven and bake for an additional 5-8 minutes, or until the cheese is melted and bubbly.
  8. Slice and Serve:
    • Once the cheese is melted and slightly browned, remove the breadsticks from the oven. Let them cool for a few minutes, then slice into sticks.
    • Garnish with chopped fresh parsley if desired. Serve warm with marinara sauce or garlic butter for dipping.

Enjoy these delicious and healthy Cheesy Cauliflower Breadsticks as a satisfying alternative to traditional breadsticks!
