Cajun-Style Pot Roast

This Cajun-Style Pot Roast is a flavorful twist on the classic comfort dish, bringing the bold, spicy flavors of the Louisiana bayou to your table. The tender, slow-cooked beef is seasoned with a robust blend of Cajun spices, garlic, and fresh herbs, creating a rich, savory meal that’s perfect for any occasion. Ingredients:

  • 3-4 lbs beef chuck roast
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional, for extra heat)
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 3 large carrots, cut into chunks
  • 4 celery stalks, chopped
  • 2 bay leaves
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon hot sauce (optional)
  • 1/4 cup fresh parsley, chopped

Instructions:

  1. Preheat the oven to 300°F (150°C).
  2. Season the roast: In a small bowl, mix the Cajun seasoning, smoked paprika, garlic powder, onion powder, thyme, oregano, black pepper, and cayenne pepper. Rub the seasoning mix all over the beef chuck roast, pressing it into the meat.
  3. Sear the roast: Heat the olive oil in a large, oven-safe pot or Dutch oven over medium-high heat. Add the roast and brown it on all sides, about 4-5 minutes per side. Remove the roast from the pot and set it aside.
  4. Cook the aromatics: In the same pot, add the chopped onion and garlic, cooking until the onion is soft and translucent, about 5 minutes.
  5. Deglaze the pot: Pour in the beef broth, diced tomatoes with green chilies, Worcestershire sauce, and hot sauce (if using), scraping up any browned bits from the bottom of the pot. Bring the mixture to a simmer.
  6. Add the vegetables: Return the roast to the pot and add the carrots, celery, and bay leaves. Spoon some of the liquid over the roast.
  7. Braise the roast: Cover the pot with a lid and transfer it to the preheated oven. Cook for 3-4 hours, or until the meat is very tender and easily pulls apart with a fork.
  8. Finish and serve: Remove the roast from the oven and discard the bay leaves. Transfer the roast and vegetables to a serving platter, then spoon the gravy over the top. Garnish with fresh parsley and serve hot.
