BLACK RICE SALAD

Instructions:

  1. Cook the black rice: Rinse the black rice under cold water. In a medium saucepan, combine the black rice with water or vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 30-35 minutes, or until the rice is tender and the liquid is absorbed. Let it cool slightly.
