Beef and Guinness Stew

Beef and Guinness Stew is a rich and hearty dish that’s perfect for a cozy meal on a cold day. This classic Irish stew combines tender chunks of beef with earthy root vegetables, all simmered in a deeply flavorful broth made from Guinness beer. The beer not only adds a rich, malty depth to the stew but also tenderizes the beef, making each bite melt-in-your-mouth delicious. Serve it with a side of crusty bread to soak up every last drop of the flavorful gravy.

Ingredients:

  • 2 lbs beef chuck, cut into 1-inch cubes
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 2 tbsp all-purpose flour
  • 1 1/2 cups Guinness beer
  • 2 cups beef broth
  • 3 large carrots, peeled and cut into chunks
  • 3 medium potatoes, peeled and cut into chunks
  • 2 stalks celery, chopped
  • 1 tbsp Worcestershire sauce
  • 2 tsp fresh thyme leaves (or 1 tsp dried thyme)
  • 2 bay leaves
  • Fresh parsley, for garnish (optional)

Instructions:

  1. Brown the beef: Season the beef with salt and pepper. In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat. Brown the beef in batches, making sure not to overcrowd the pan. Remove the beef from the pot and set it aside.
  2. Cook the onions and garlic: In the same pot, reduce the heat to medium and add the chopped onion. Cook until softened, about 5 minutes. Add the garlic and cook for another minute.
  3. Add tomato paste and flour: Stir in the tomato paste and flour, cooking for 2-3 minutes to form a roux.
  4. Deglaze with Guinness: Gradually pour in the Guinness, scraping up any browned bits from the bottom of the pot. Allow the beer to reduce slightly for 2-3 minutes.
  5. Simmer the stew: Return the browned beef to the pot and add the beef broth, carrots, potatoes, celery, Worcestershire sauce, thyme, and bay leaves. Bring the stew to a simmer, then reduce the heat to low. Cover and cook for 2-2 1/2 hours, or until the beef is tender and the vegetables are cooked through.
  6. Adjust seasoning and serve: Taste the stew and adjust the seasoning with more salt and pepper if needed. Remove the bay leaves and garnish with fresh parsley if desired.
