Ingredients:

  • 2 cups cooked black beans or pinto beans (or one 15 oz can, drained and rinsed)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup water or vegetable broth
  • 4 large flour tortillas
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1/2 cup salsa (optional)
  • 1/2 cup sour cream (optional)
  • 1/2 cup guacamole (optional)
  • Shredded lettuce, diced tomatoes, chopped cilantro, or other desired toppings

Instructions:

  1. Prepare the Bean Filling:
    • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
    • Stir in the cooked beans, ground cumin, chili powder, smoked paprika, salt, and pepper. Cook for 2-3 minutes, allowing the spices to coat the beans.
    • Pour in the water or vegetable broth, and mash the beans slightly with the back of a spoon or a potato masher, leaving some beans whole for texture. Cook for an additional 2-3 minutes until the mixture is heated through and slightly thickened.
  2. Assemble the Burritos:
    • Warm the flour tortillas in the microwave or on a skillet for a few seconds to make them pliable.
    • Place a generous spoonful of the bean mixture in the center of each tortilla.
    • Sprinkle with shredded cheese and add salsa, sour cream, guacamole, or any other desired toppings.
  3. Roll the Burritos:
    • Fold in the sides of the tortilla, then roll it up from the bottom to the top to enclose the filling. Make sure the burrito is tightly wrapped.
  4. Serve:
    • Serve the bean burritos warm, with additional toppings like shredded lettuce, diced tomatoes, and chopped cilantro if desired.

Enjoy your Bean Burritos, a simple and flavorful dish that’s perfect for a quick lunch, dinner, or even breakfast!
