Banana Meringue Pie is a delightful dessert that combines the creamy richness of banana filling with a light and fluffy meringue topping. This pie starts with a flaky, buttery crust, filled with a luscious banana custard that’s made with fresh bananas, creating a sweet and comforting base. The real showstopper, however, is the meringue, whipped to perfection and piled high, then baked until it’s golden brown and slightly crispy on the outside. Each slice is a harmonious blend of smooth banana custard, airy meringue, and crisp crust, making it a perfect treat for any occasion. Whether served at a family gathering or a dinner party, Banana Meringue Pie is sure to impress with its classic flavor and elegant appearance.

Ingredients:

For the Crust:

  • 1 pre-baked 9-inch pie crust (store-bought or homemade)

For the Banana Filling:

  • 3 large ripe bananas, sliced
  • 2/3 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 cups whole milk
  • 3 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

For the Meringue Topping:

  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/3 cup granulated sugar
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Prepare the Banana Filling:
    • In a medium saucepan, whisk together the sugar, cornstarch, and salt. Gradually add the milk, whisking constantly to prevent lumps. Cook over medium heat, stirring frequently, until the mixture thickens and comes to a gentle boil, about 5-7 minutes.
    • In a small bowl, lightly beat the egg yolks. Slowly add a few tablespoons of the hot milk mixture to the yolks, whisking constantly, to temper them. Then, pour the tempered yolks back into the saucepan, continuing to stir. Cook for an additional 2-3 minutes until thickened. Remove from heat and stir in the butter and vanilla extract.
  2. Assemble the Pie:
    • Arrange the sliced bananas evenly over the bottom of the pre-baked pie crust. Pour the hot custard filling over the bananas, spreading it evenly. Set aside while you prepare the meringue.
  3. Make the Meringue:
    • In a clean bowl, beat the egg whites and cream of tartar with an electric mixer on medium speed until soft peaks form. Gradually add the sugar, one tablespoon at a time, beating on high speed until stiff, glossy peaks form. Beat in the vanilla extract.
  4. Top and Bake:
    • Spoon the meringue over the hot banana filling, spreading it to the edges of the pie crust to seal. Use the back of a spoon to create peaks. Bake in a preheated 350°F (175°C) oven for 10-12 minutes, or until the meringue is golden brown.
  5. Cool and Serve:
    • Let the pie cool on a wire rack, then refrigerate for at least 2 hours before serving to allow the filling to set. Slice and enjoy!

Banana Meringue Pie is a deliciously sweet and creamy dessert that’s perfect for any occasion. With its smooth banana custard and airy meringue topping, this pie is sure to be a crowd-pleaser that everyone will love.
