Balsamic-Glazed Zucchini

Balsamic-Glazed Zucchini is a simple yet flavorful side dish that brings together the sweetness of caramelized balsamic vinegar with the fresh, tender bite of sautéed zucchini. Ingredients:

  • 4 medium zucchini, sliced into rounds
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the zucchini slices in a single layer and cook for 3-4 minutes per side, until golden brown and slightly tender. Work in batches if necessary to avoid overcrowding the pan.
  2. Once all the zucchini is cooked, set it aside. In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.
  3. Pour in the balsamic vinegar and honey (or maple syrup) and stir well. Allow the mixture to simmer and reduce for 2-3 minutes, until it thickens into a glaze.
  4. Return the cooked zucchini to the skillet and toss to coat in the balsamic glaze. Season with salt and pepper to taste.
  5. Remove from heat and garnish with fresh basil or parsley if desired.
