Paired together, the creamy lentils provide a satisfying base, while the salmon adds a succulent, protein-packed punch. It’s a simple yet elegant meal that’s ideal for a weeknight dinner or a special occasion.

Ingredients:

For the Salmon:

  • 4 salmon fillets (about 6 oz each)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 lemon, sliced

For the Lentils:

  • 1 cup green or brown lentils, rinsed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 2 cups vegetable or chicken broth
  • 1 bay leaf
  • 1 tablespoon olive oil
  • Salt and pepper to taste

For the Lemon Herb Sauce:

  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh dill, finely chopped
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Prepare the Lentils:
    • Heat olive oil in a medium pot over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté until softened, about 5-7 minutes.
    • Add the lentils, bay leaf, and broth to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender. Season with salt and pepper to taste. Remove the bay leaf and set aside.
  2. Bake the Salmon:
    • Preheat your oven to 375°F (190°C).
    • Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil, and season with salt and pepper. Top each fillet with a slice of lemon.
    • Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  3. Make the Lemon Herb Sauce:
    • In a small bowl, whisk together the chopped parsley, dill, lemon juice, olive oil, minced garlic, salt, and pepper.
  4. Assemble the Dish:
    • Divide the cooked lentils among four plates. Place a salmon fillet on top of each bed of lentils.
    • Drizzle the lemon herb sauce over the salmon and lentils.
    • Serve immediately, garnished with additional fresh herbs or lemon slices if desired.
