  • Salt, to taste

For Serving:

  • 8 small corn or flour tortillas
  • 1 avocado, sliced
  • Fresh cilantro, chopped
  • Lime wedges

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Season the Cod:
    • In a small bowl, mix together the olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and black pepper. Rub this spice mixture evenly over the cod fillets. Place the seasoned cod on the prepared baking sheet.
  3. Bake the Cod:
    • Bake the cod in the preheated oven for 10-12 minutes, or until the fish is opaque and flakes easily with a fork. Remove from the oven and let it rest for a few minutes.
  4. Prepare the Slaw:
    • In a large bowl, combine the shredded cabbage, shredded carrots, red onion, chopped cilantro, lime juice, olive oil, salt, and black pepper. Toss to coat evenly and set aside.
  5. Make the Lime Crema:
    • In a small bowl, whisk together the sour cream (or Greek yogurt), mayonnaise, lime juice, lime zest, and a pinch of salt. Adjust seasoning to taste.
  6. Warm the Tortillas:
    • Heat the tortillas in a dry skillet over medium heat for about 30 seconds on each side or wrap them in foil and warm them in a low oven.
  7. Assemble the Tacos:
    • Place a few pieces of baked cod in each tortilla. Top with a generous spoonful of slaw, a drizzle of lime crema, and slices of avocado. Garnish with fresh cilantro and serve with lime wedges on the side.
