Ingredients:

  • 1 pound ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground oregano
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and black pepper, to taste
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup shredded Monterey Jack cheese
  • Fresh cilantro or green onions, chopped (for garnish)

Instructions:

  1. Cook the Beef: In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned, breaking it up with a spoon as it cooks. Drain excess fat if necessary.
  2. Sauté the Vegetables: Add the chopped onion, garlic, red bell pepper, and green bell pepper to the pot with the beef. Sauté for 5-7 minutes, or until the vegetables are softened.
  3. Add the Beans and Tomatoes: Stir in the kidney beans, black beans, diced tomatoes, tomato sauce, and tomato paste.
  4. Season the Chili: Add the chili powder, ground cumin, smoked paprika, oregano, cayenne pepper (if using), salt, and black pepper. Stir to combine all the ingredients.
  5. Simmer: Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for 30 minutes, stirring occasionally to prevent sticking.
  6. Add the Cheese: Stir in 1 cup of the shredded cheddar cheese until melted and fully incorporated into the chili. Taste and adjust seasoning if necessary.
  7. Serve and Garnish: Ladle the chili into bowls and top each serving with a generous sprinkle of the remaining cheddar cheese and Monterey Jack cheese. Garnish with chopped cilantro or green onions.

The melted cheese adds a luxurious creaminess to the hearty chili, making it irresistible to cheese lovers.
